These are super simple, healthy and make for an awesome after school snack for the kiddos. Well, let’s not forget the adults too! This is a great energy boosting snack for your midday crash or pre/post workout. I had a little artsy moment with myself in the kitchen and pieced it all back together making one impossible-to-eat giant sandwich (lol). For you at home, feel free to tackle it layer by layer or place 2 slices together with the ingredients below.
-1 tsp lemon juice (keeps apple from turning brown)
-3 tbsp peanut or almond butter
-2 tbsp dark chocolate chips
-3 tbsp dry oats
-Alternatives: raisins, nuts, honey.
1. Cut the apple into thin slices (keeping the top and bottom).
2. Cut out the core with a small round cookie cutter.
3. Add peanut butter, chocolate chips and oats to each slice.
The lemon comes into play if you intend on packing mini sandwiches in your kiddos lunchboxes. After adding the peanut butter, dark chocolate chips and oats, you’ll sprinkle a little lemon juice on top of each sandwich to help keep the apple from turning brown. If it gets to be too “lemony”, mix the lemon juice with a little water.
