In honor of National Peanut Butter Lovers Month, I made you a Peanut Butter & Banana Parfait! Since Americans consume over 1.5 billion pounds of peanut butter and peanut products each year…why not? I am a GINORMOUS fan of peanut butter and banana combinations —> check out my “Snacks” tab. This is an easy, healthy recipe everyone will enjoy!
Let’s get to it.
- 1 tablespoon of the peanut butter of your choice
- 1 small banana
- 1 5.3 ounce container of vanilla Greek yogurt
- chia seeeds
Combine Greek yogurt and peanut butter in a small mixing bowl. Mix thoroughly so that there are no chunks of peanut butter remaining. This will make it easier for you when it comes time to fill the glass.
Cut the banana into thin slices (approximately 1/2 inch). Using a champagne flute or cocktail glass, rim the glass with the banana slices. Don’t worry, they will stick on their own. You may have to gently press the slices to get them to adhere.
Carefully fill the glass with the yummy peanut butter and Greek yogurt mixture. Tip: Use two spoons to delicately drop in smaller quantities. One to hold the mixture and another to scoop in the mixture.
Sprinkle chia seeds on top and chill for 15 minutes prior to serving.
