Raspberry Chia PuddingIf this isn’t food porn, I don’t know what is! I made this Raspberry Chia Pudding Parfait thinking it’d be time consuming and difficult, but I was pleasantly surprised! Believe it or not, this was my 1st time making Overnight Oats and Chia Seeds Pudding. Really! To put things bluntly, DON’T WAIT ANOTHER SECOND. With a few simple ingredients, it’s seriously dump, stir, pour and you’re done.

Here’s what’s up — “Chia” means strength, and folklore has it that these cultures used the tiny black seeds as an energy booster. They contain healthy omega-3 fatty acids, carbohydrates, protein, fiber, antioxidants, and calcium. Also, Chia Seeds can absorb up to 12 times its own weight causing them to expand and curb your appetite! Some health benefits may include: reduces blood pressure, lowers cholesterol, regulating bowel functions, improves heart health, reduces inflammation, controls blood sugar, aids in weight loss, increases energy and more.

So sprinkle these tiny bombs of goodness into your cereal, yogurt and oatmeal. Don’t forget lunch and dinner by adding them to your salad and entrees. Regardless, the crunchiness never disappoints.

Raspberry Chia Parfait

CHIA SEEDS PUDDING

INGREDIENTS

1/2 cup of vanilla Greek yogurt
2 tablespoons of chia seeds
1/2 cup of almond milk
1/8 teaspoon of vanilla extract
1/2 teaspoon of honey

INSTRUCTIONS

Stir all 5 ingredients together
Place in a covered container and refrigerate for 4+ hours

OVERNIGHT OATS

INGREDIENTS

2/3 cup of steel cut oats (do not use instant oatmeal)
2/3 cup of milk (almond milk or skim milk)
1/8 teaspoon of vanilla extract
1 tablespoon of honey or agave sweetener
1/2 teaspoon of cinnamon

INSTRUCTIONS

Combine all 5 ingredients and mix well
Place in a small mason jar or glass container and refrigerate overnight

RASPBERRY CHIA PUDDING PARFAIT 

INGREDIENTS

Small cocktail glass
2 teaspoons for layering process
Chia seeds pudding
Overnight oats
Fresh berries for topping (optional)

INSTRUCTIONS

Layer overnight oats on the bottom of your glass
Rim the glass with fresh or frozen raspberries
Layer in chia seeds pudding
Repeat all 3 steps until glass is filled to the desired amount
