Salmon Salad with Avocado, Blueberries and WalnutsTo celebrate my first ever 21 Day HIIT Challenge, I made this yummy Salmon Salad with Avocado, Blueberries and Walnuts. It was wildly refreshing and incredibly tasty!

SALAD INGREDIENTS:

— 8-9 ounces baked salmon, chopped & chilled
— 1 large avocado, peeled, pitted and diced
— 4 cups baby spinach
— 1/2 cup fresh blueberries
— 3 stalks hearts of palm, roughly chopped
— 1/4 cup feta or blue cheese crumbles
— 1/4 cup chopped walnuts
— 1/2 red onion, thinly sliced

HONEY CHIA SEED VINAIGRETTE:

— 1/3 cup olive oil
— 2 tablespoons balsamic vinegar
— 1 tablespoon chia seeds
— 1 tablespoon honey
