Turkey Meatballs with Basil and Artichokes

TURKEY MEATBALLS WITH BASIL AND ARTICHOKES

Hey guys! I know I’ve been quite this past week and there’s a very good reason for that. If you follow me on Facebook or Instagram you already know that my husband and I are officially first time home owners!!! I can’t begin to tell you how exciting, yet exhausting these past few weeks have been for the both of us. Holy hell, this week alone has been nothing but cleaning, scrubbing, more scrubbing, and more cleaning! Let’s just say that you could literally eat sushi off of our blinds, floors, cabinets, etc. Today is the first day where I got to experience normalcy again. YES! So what did I do with my freedom? I made these Paleo inspired Turkey Meatballs with Basil and Artichokes for dinner tonight. I’ll be serving them over Spaghetti Squash with Rosemary, Shallots and Parmesan.

INGREDIENTS:

—1 pound ground turkey (93% lean)
—1 14 ounce can artichoke hearts, roughly chopped
—1/4 yellow onion, diced
—1/4 cup fresh basil, chopped
—1/3 cup black olives, chopped
—1 teaspoon coconut oil
—salt and pepper to taste

INSTRUCTIONS:

—Preheat oven to 350 degrees
—Place skillet over medium heat, add coconut oil
—Add diced onions and chopped artichokes to skillet
—Continue to stir until onions are translucent
—Remove skillet from heat and let cool (10 minutes)
—In large mixing bowl, combine all ingredients and mix well
—Form meatballs (approx 15-18) and place on baking sheet
—Bake for 18-20 minutes or until cooked thoroughly

Food for thought. Feel free to adjust this recipe to your desired taste. I have certainly played around with this recipe and have added things like goat cheese in the center of the meatball for a bit of flare. It was remarkably delicious.

Tuna Stuffed Avocados

 TUNA STUFFED AVOCADOS

Oh yeah baby, this is happening! I just made myself these Tuna Stuffed Avocados for lunch in honor of Day #18 of my personal fitness transformation. Oops, if you’ve missed my big announcement, click here for details —> 21 Day HIIT Challenge.

Filled with zesty lemon infused tuna, crispy onions, fresh basil, and black pepper these were the bomb! That’s right y’all, you won’t find a single trace of fatty mayo in these loaded avocados. Now, I know that individually avocados and tuna are both acquired tastes. But if you love both separately, you’ve got to try this new combination.

Avocados, a.k.a. the “Alligator Pear” are loaded with healthy unsaturated fat (the good-for-you kind), vitamins A, C, E, K, B6, magnesium, copper, iron, calcium, and potassium. Avocados contain omega-3 and omega-6 fatty acids, as well as 18 of the 22 amino acids (including all 8 essential amino acids). Additionally, unlike meat protein, which is difficult to digest, avocado protein is readily absorbed by the body due to its high levels of fiber. If you are a vegetarian or vegan seeking ways to amp up your protein intake, avocados are the perfect alternative!

INGREDIENTS:

— 1 Ripe Avocado
— 1 Can of Tuna
— 1 Tablespoon of Onion (chopped)
— 1/2 Fresh Basil Leaves (chopped)
— 1 Slice of Lemon
— Black Pepper to Taste

INSTRUCTIONS:

— Cut avocado in half, keeping the skin on and removing the pit
— Combine all ingredients in small mixing bowl and mix
— Carefully place mixture on top of each half of the avocado
— Garnish with remaining basil

*Feel free to adjust this recipe accordingly to meet your desired taste. If tuna isn’t your thing, try shredded or diced chicken. Not many people enjoy tuna without mayo, but for me this was PERFECT!

Brussel Sprouts Salad with Shrimp & Avocado

BRUSSEL SPROUTS SALAD WITH SHRIMP & AVOCADO

What’s for dinner…

Tonight I played around with an older recipe that I posted here on Facebook more than 9 months ago. My husband and I LOVE shrimp, brussel sprouts, sweet potato and avocado, SOOOOOOO here we go. It was NOM NOM NOM NOM, but perhaps the sweet potato deserves its own private dish. Nonetheless, it was super yummy!!! I’ll let you guys decide.

SALAD INGREDIENTS:

— 1 pound of shrimp
— 2 cups brussels sprouts
— 1/2 cup unsalted almond
— 1 large sweet potato
— 1/2 white onion
— 1 large avocado
— 1 tbsp. coconut oil
— salt & pepper to taste

VINAIGRETTE INGREDIENTS:

— 2 tbsp. balsamic vinegar
— 2 tbsp. spicy brown mustard
— 1 tbsp. chipotle raspberry sauce

SWEET POTATO INSTRUCTIONS:

— preheat oven 350 degrees
— peel sweet potato and cube
— combine with 1 tsp. coconut oil, salt, pepper
— place on parchment paper lined baking sheet
— bake for 30-40 minutes (toss 1-2 times)
— place baked potatoes in refrigerator and chill

SHRIMP INSTRUCTIONS:

— sauté shrimp in 1 tsp. coconut oil
— add pepper to taste
— place cooked shrimp in refrigerator to chill

VINAIGRETTE INSTRUCTIONS:

— combine all ingredients and mix well
— place in refrigerator and chill

SALAD INSTRUCTIONS:

— cut ends off brussel sprouts and chop
— roughly chop almonds
— chop onion
— peel and dice avocado into small cubes
— combine all ingredients and mix well

Breakfast Smoothie with Strawberries, Blueberries & BananaMy personal time has been extremely limited these past few weeks and to say that I’m “on the go” is an understatement. Breakfast, what’s that? You mean a spinach and mushroom egg white omelet with a side of turkey bacon and glass of freshly squeezed orange juice? While that all sounds lovely, I’ll stick to my breakfast in a cup. Plop, plop, blend, blend, and chug. That’s more like it these days.

All kidding aside, I wanted to share this with you for two reasons. If you’re a busy parent with screaming kids, soccer games, and after school activities this might be the answer you’ve been looking for. Corporate robots, I haven’t forgotten you either. My Diet PillWhat’s my secret?? It’s a new diet pill called “GET UP & MOVE YOUR ASS.” I’m loving the results from it so far!!

People frequently ask me, “What supplements do you take?” Allow me to break it down for you. I take B12 and drink Shakeology, that’s it. When it comes to any type of diet pill, I take zilch, zero, nada, none! With all do respect to those who do, I personally do not allow random pills to define me. I’d rather work my ass off and earn my results the right way than to “cheat” or fake it with some magic diet pill.

They take just 5 minutes to prepare, 30-40 minutes to make and are a super healthy alternative to junkie chips. So buckle up buttercups, because these are going to knock your socks off!

Foodie Facts: Garbanzos have a delicious nutlike taste and a texture that is buttery, yet somewhat starchy and pasty. Spaghetti Squash with Rosemary, Shallots & ParmesanThis is one of my favorite dishes to make throughout the week—Spaghetti Squash with Rosemary, Shallots & Parmesan. Serve with Turkey Meatballs, Crab Cakes or any meat option of your choice.

Bolder, brighter, and richer in nutrients than your basic penne pasta, spaghetti squash is the perfect addition to an easy family dinner. One cup of cooked spaghetti made from white, enriched noodles, contains approximately 220 calories, 42 grams of carbohydrates and very few nutrients.

Comparably, one cup of cooked spaghetti squash provides about 42 calories, 10 grams of carbohydrates, and a host of important nutrients such as vitamin A and potassium. continue reading

Morning Berry SmoothieLet’s face it, the American diet is terrible. Rarely do any of us eat enough fresh fruits and vegetables; instead, we reach for what’s quick and easy—packaged food and fast food—which have been so over-processed that their nutrients have long been destroyed. The reality is, we’re running our bodies on empty. WE NEED MORE FUEL, GOOD FUEL. Not empty-calorie junk.

Banana Almond SmoothieBy far, this is one of my most favorite combinations — bananas & almond butter or peanut butter! Yum! This Banana Almond Smoothie is super delicious, healthy and incredibly easy to make. I hope you guys like it just as much as I do! Let’s check it out…

Believe it or not, this was my 1st time making Overnight Oats and Chia Seeds Pudding. Really! To put things bluntly, DON’T WAIT ANOTHER SECOND. With a few simple ingredients, it’s seriously dump, stir, pour and you’re done.

Here’s what’s up — “Chia” means strength, and folklore has it that these cultures used the tiny black seeds as an energy booster. They contain healthy omega-3 fatty acids, carbohydrates, protein, fiber, antioxidants, and calcium. I am OBSESSED with unique variations like these for multiple reasons and have been known to preach the importance of changing up your routine. Yes, standard movements are extremely beneficial on their own. But, if you have ever found yourself hitting a plateau or you’re just not seeing the definition you want IT’S TIME FOR A CHANGE! Charge your body to engage different muscles. Energize muscles that you haven’t felt before. Start toning those difficult places you have always dreamed about.

Performing circuits like this “Office Workout” keeps me wanting more. My workouts stay fresh, exciting and fun. Nobody wants to do the same thing over and over again. NO GYM? NO PROBLEM! TRY THIS “WASHCLOTH WORKOUT”!

“Gliding Discs” are an awesome way to perform a total body workout. Typically, they are double-sided for versatility and work on both carpet and hard surfaces. From lunges and squats to upper-body exercises, you are guaranteed to target specific muscle groups and tone your entire body! Personally, I don’t own these yet so I’ve made my own version using washcloths. They are the PERFECT alternative and I’m loving the results of my workouts. If you don’t have hardwood floors, no problem. Grab a couple paper plates.

GuacamoleThis is one of my favorite snacks to make on the weekends — healthy guacamole with a crunchy twist (bacon)!!! Yes, you either love avocados or you hate them. My husband and I LOVE them and here’s why: Avocados are packed with various essential nutrients and “healthy” fats making them a deliciously smart snack for any occasion. Referred to as the “alphabet fruit”, you’re consuming vitamins A, C, E, K and B6, along with an enormous amount of potassium.

Try pairing guacamole with whole-grain breads, turkey wraps or chicken sandwiches. Some even enjoy topping their eggs with it for breakfast, which is a combination I have yet to try (or maybe never, lol). Personally, I suggest ordering guacamole with fresh veggies instead of chips for a healthy alternative — carrot sticks, sliced cucumbers, red  peppers, broccoli, cauliflower, etc.
